A seasoned Sardinian pecorino, with a compact texture and a straw yellow color, made with pasteurized sheep’s milk. Fattorie Gennargentu actually produces its selection of pecorini, using milk from flocks raised in the wild, in mountain pastures. These are the ideal conditions that allows cheesemakers to create a selection of pecorini with a unique and authentic character. “Vecchio Saggio” pecorino cheese in particular will surprise you with its strong and rich taste, conferred by the slow and long maturation carried out in the mountains of central Sardinia.The name “Vecchio Saggio”, means “the Old Wise”, reminding the complexity of flavors obtained with the long seasoning process.
Tips to taste “Vecchio Saggio” pecorino cheese
Try “Vecchio Saggio” with a drop of a sweet jam – such as peach jam – or with some honey. They both will enhance all its flavors. The consistency of the seasoned pecorino cheese makes it an ideal product for grating. Try it on your pasta dish to add a special final touch. Being a tasty cheese, you can also use it to add flavor to your baked pasta or to cooked vegetables. Of course, you can also simply serve it as a table cheese.

Pasteurized sheep’s milk, salt, rennet, selected lactic ferments. Glazing agents: preservatives E203 – E235, colors E150d – E160b. Inedible crust. Does not contain GMOs.
