Carloforte bluefin tuna ventresca in olive oil is a special handmade product. Pescheria Fratelli Feola produces it, using the most precious and noble part of bluefin tuna, that of the belly. Actually, the name “ventresca” comes from the Italian “ventre” which means belly. Ventresca is more difficult to find because it can only be obtained from a small portion of the fish, rich in lipids. The abundance of lipids is actually what gives to this meat a unique taste and its softness. Enogastronomia F.lli Calamai selected this ventresca to rediscover all the flavor of the fine bluefin tuna.
