Description
Although similar to the most famous Italian blue cheese, gorgonzola, the blue pecorino cheese is probably closer to roquefort, as it is made with sheep’s milk. The addition of selected noble molds (penicillium roquefort) allows the development of the typical marbling. This pecorino is therefore characterized by a soft consistency, a pearl white color and gray-blue veins giving the cheese a strong and pungent taste.
Tips to taste blue pecorino cheese
Despite its strong taste, this pecorino is a very versatile cheese. It can be tasted both during or at the end of the meal. You can pair it with a robust red wine. It also lends itself to countless uses and recipes. Pears and walnuts can accompany it for a tasty appetizer. Together with speck it becomes an excellent filling for savory pies. Try it to fill tasty omelettes or in a special risotto.
