Description
Fior di Seggiano is a semi-seasoned pecorino cheese, with 50-60 days of maturation. White in color and homogeneous in texture, this pecorino preserves all the intense aroma of milk. It has actually a sweet taste, which is however very well marked despite the short maturation. It is produced by Caseificio Seggiano in the south of Tuscany thanks to a mix of tradition and innovation and Enogastronomia F.lli Calamai selected it as an authentic and traditional variety of local pecorino.
Tips to taste “Fior di Seggiano” pecorino cheese
This pecorino is a very versatile semi-seasoned cheese. Actually it is perfect with Tuscan salami or Tuscan ham, but it also goes very well with wild boar salami. Try to serve it with fresh fruit such as pears or apples on a board or together with cooked vegetables. If you are planning to prepare an Italian cheese grazing board, you can accompany it with citrus jams or wine jellies. A sweet drop of honey will be perfect as well. Finally, a light red wine or a light beer will perfectly accompany the tasting.
