Pastificio Gentile selects only high quality ingredients and a unique production method inspired by the tradition: only the best durum wheat semolina, a careful kneading, bronze drawing, and a drying process at low temperatures. The paccheri are actually dried at low temperatures according to the “Cirillo method” from the name of the engineer who invented it. It is a method which reproduces the natural drying obtained thanks to the sun and the wind.
